Baked vegetables

This is also a very simple and healthy dish you can serve with fish or meat, or even just as it is. You can use any vegetables as per your taste. I will share with you my recipe which it varies from time to time depending on the season. I try to use only biological ingredients as it is healthier and tastes better.

Recipe for 4 servings:

2 courgette (zucchini)

1 eggplant

2 bell pepper (I usually use red and yellow)

2 or 3 carrots

3 or 4 potatoes

2 small onions or 1 large

Coconut oil

Salt and pepper to taste

Oregano

Curcuma powder

Red pepper powder

2 clove of garlic

Chopped parsley

Grated parmesan

Instructions:

Wash and chop all the vegetables in small cubes (3-4 cm) and put them in a baking sheet, set aside.

In a bowl mix all the spices with coconut oil. Put the mixture all over the vegetables and mix them well with a wooden spoon or your hands.     (I prefer to mix them with my hands). Bake for +/- 30 min depending on the oven or until they’re cooked.  If you want you can add some grated parmesan on top just before serving, I always do. Serve as it is or with fish/meat.
